They are the pork chops with the bones removed and most of the fat trimmed away. They are all good lean eating from corn-fed, mid-western porkers. Fresh frozen. Not salted. Packed one per package, cut 3/4 to 1 inch thick.
Select boneless filets from the heart of the pork loin. Wrapped with our own hickory smoked Country Cured Bacon. Each filet is individually vacuum packaged and flash frozen. Shipped frozen.
We begin with select 10 to 12 ounce full center cut Pork Chops. They are cured, rubbed with special spices, cooked and smoked with great care. Cooked Chops weight six to eight ounces each. Individually vacuum sealed for your convenience.
We use only the freshest pork (including the hams and loins) to make this sausage. It is seasoned with a delicate blend of spices to create a medium spiced taste. For your convenience, the sausage is cut into approximately 1.75 oz. patties, frozen and sent to your door. Breakfast is as close as your refrigerator. Pork used is fresh, not cured with salt, although some salt is used in seasoning.
